2 cups pecans, toasted (I leave mine whole but you can chop)
1 cup maple syrup
1 cup sucanat
1 teaspoon vanilla
4 tablespoons melted coconut oil
uncooked 9-inch pie shell
1. Pre-heat the pie shell in the oven.
2. Mix pecans, maple syrup, sucanat, eggs, vanilla and coconut oil together.
3. Pour into hot pie shell and bake at 350 for 30 minutes. You want the center to jiggle like gelatin.
4. Cool thouroughly before serving.
